Garlic Tofu & Green Beans


In an effort to get back on track with my healthy eating routine, I decided to make this quick dish with just two main ingredients! First you add 2 tbs. of olive and minced garlic (about two cloves or I just buy minced garlic already prepared) and combine in a medium heated nonstick skillet for 5 minutes. While the oil is warming up, snap off the edges of fresh green beans (about a handful) and measure about a half cup of tofu (I buy it already cubed). Next add the fresh green beans into the garlic infused olive oil and continuously stir for five minutes. Slightly increase the temperature and then add the tofu and continuously stir for 5 minutes. Add sea salt and pepper to taste. In around 15 minutes or less you will have a delicious dinner that you can feel confident about eating!
