I will be the first to admit that my eating habits are poor.  I love to exercise. When it comes to eating healthy, I struggle with it.  My poor habits are keeping me from results I really want to see.  I look at my bloating belly and feel sad sometimes.  I’ve read articles on how to lose belly fat. I just don’t have any momentum to do the work.  For me, weight loss is 80% mental.  Having a healthy spirit and mind helps me lose weight.  The moment my spirit is off kilter my eating spins out of control.  The first thing I grab is some carbohydrates in the form of donuts, pasta, chips & etc…  Which causes me to gain weight.  It totally sucks, and it is frustrating to continue in this cycle.

I am ready to make changes.  I am ready to learn how to fight through the tough moments.  I don’t want to send myself to an early grave all over something I have control over.  I want to live a long prosperous life.  I want to travel, have children one day, be married,  go to a nude beach.  I can do all those things. I know I can, but I want to do them healthy especially the nude beach.  I can see myself prancing around with my fit body on the beach in my two piece bathing suit sipping Mai Tai’s.  My goals are reachable and attainable. I must do the work to attain them. I  will no longer let my emotions and appetite control me, but I will control them.  One way I’m choosing to take control back is to make small changes in my diet.  So the other day, I switch out my whole wheat brown pasta for squash noodles to make Non-pasta Pasta Salad.  It was delicious.  I’ve seen different recipes on Pinterest, and I decided to try it out for myself.

I made this pasta salad with the Veggetti Slicer. This is my new favorite kitchen gadget. It is easy to use and comfortable in the hand.  It’s really a neat gadget, but I am also very easily entertained. The Veggetti really amazed me.

Recipe

  • 1 Squash
  • Onions diced
  • Tomatoes
  • Cucumbers
  • Badia Complete Seasons
  • Italian Dressing Fat-Free
  • 1 Veggetti Slicer

Diced onions, tomatoes, and cucumbers place them in a large bowl.  Use your Veggetti Slicer to create angel hair pasta with your squash. It is super easy to use. Place vegetable inside the Veggetti Slicer and twist. I would let my 9-year niece use this gadget under my supervision of course.  After you have twisted out your pasta, place it in boiling water for 5 minutes.  Just long enough to soften the squash.  Then transfer the squash to a bowl with cool water.  Once cool mix squash pasta with the other veggies toss in fat-free Italian dressing.  seasoned to taste.  chill for 30 minutes. Then Bon Appetit!
